When a Client is setup, by default the Accept PAYE is ticked. This means that the client is happy to accept candidates where their type is set to PAYE.
If you untick this option and attempt to add a booking for this client and the candidate is set to PAYE, the candidate will not show on the list because the are a type the client does not accept.
